It was one of those chaotic summer afternoons… you know the kind. The boys were chasing each other through the kitchen, my husband was already on his way home, and I hadnโ€™t started dinner yet. I opened the fridge, spotted the ground beef, and had the sudden craving for burgers. But we had no burger buns, and I didn’t have the time (or energy) to load up both boys and head to the grocery store.

While I already mastered making our own burger patties in no time, I hadn’t yet made it to homemade burger buns. Until that night.

I remembered that I make our own bread and was no stranger to whipping up recipes on the fly. Thatโ€™s exactly how this no-rise burger bun recipe came to life.

I leaned on my bread dough formula, did some research and tweaked it a little, and in less than half an hour, we had soft, warm, golden buns cooling on the counter. I honestly had my doubts because my brain couldn’t understand the concept of no rise time, but my ADHD brain wanted burger buns, and it wanted burger buns now. And it paid off!

How Long Do These Burger Buns Last?

I honestly can’t tell you how long these no-rise buns last, because in my house they are gone before the second day is over. So I really don’t think you will be needing the answer to that question ๐Ÿ˜‚

How Are They So Fluffy Without Rising?

You, like me, are probably wondering how these buns can rise and still be so soft without the 2-4 hour rise time like most bun recipes. The two tablespoons of yeast compared to the 500 grams of flour is a relatively high ratio, and with the warm water and sugar, activates very quickly (this is what releases the gas and causes a “rise”). A lot of the rising is done in the oven. Plus the addition of eggs and oil strengthen the gluten structure without overdeveloping it (i.e. making it dense). I have not applied this science to a no rise bread recipe although I am curious! But for now these buns turned out so deliciously that I am content.

Super Fast Burger Buns

Super fast and sooo soft AND ready in less than 30 minutes!!

Equipment

  • 2 medium bowls
  • 1 baking tray
  • 1 Dough whisk if not using stand mixer
  • 1 Dough cutter

Ingredients

  • 1 cup warm water
  • 2 tbsp active dry yeast
  • 1/4 cup granulated sugar or honey
  • 1/3 cup oil
  • 1 egg
  • 1 tsp salt
  • 500 grams flour

Instructions

  • Combine warm water, yeast and sugar in medium bowl and mix gently. Let rest 5 minutes until foamy.
  • In a separate bowl beat together egg, oil and salt. Add to yeast mixture.
  • Add flour and mix with dough whisk (or on low with stand mixer) until gently combined and shaggy. Let rest for five minutes.
  • On a lightly floured surface knead for 3-5 minutes (or on low with stand mixer) until dough is stretchy but doesn't break.
  • Divide into 8 equal balls and shape.
  • Place on baking tray and let rest for 20 minutes (optional).
  • Bake at 425โ„‰ for 8-12 minutes. Remove from oven and lightly brush with oil.
