I’ve shared plenty about my favourite meal replacement protein shake, with fat, carbs and protein, for a fast and full meal on the go, but sometimes I just want a little more substance to keep me fuller longer.
Enter the homemade energy bites. Just five simple ingredients, easy to make and easy to store. The perfect meal prepping solution for myself, my kids, and even my husband’s lunches.

They might be just a snack, but they remind me why I’m so committed to intentional living. It’s not about having a Pinterest-perfect kitchen or following a rigid wellness plan. It’s about creating rhythms (I’m trying to replace the word routine with rhythm… way less pressure that way!) that move us from chaos to calm. And sometimes those rhythms can be as simple as a batch of no-bake snacks that give me steady energy when motherhood feels loud and demanding (which is quite often every day).
These energy bites have become one of those little anchors in my week, a reminder that wellness doesn’t have to be complicated or expensive.

When I first became a stay-at-home mom, I quickly realized how quickly I reached for packaged snacks for myself and my kids. It wasn’t that I didn’t know better. It was survival mode. - Rolled oats
- Natural peanut butter
- Honey or maple syrup

I usually double the recipe so we have enough for the whole week.

Oatmeal Energy Bites (that actually fill you up!)
Equipment
- 1 Mixing bowl
- 1 Spatula
- 1 3tbsp dough scoop optional
Ingredients
- 2 cups rolled oats/quick oats
- 1/2 cup peanut butter use natural peanut butter for better flavour
- 1/2 cup honey use maple syrup for a vegan substitute
- 1 tsp vanilla extract
- 1 tsp fine sea salt
Instructions
- Combine all ingredients in a bowl and mix well.
- Using the dough scoop, create equal size balls (makes about 8 large ones)
- Chill for 20 minutes before serving (firms up the peanut butter and makes them less crumbly). Keep in the fridge and enjoy!
