Oatmeal Energy Bites (that actually fill you up!)

- 2 cups rolled oats/quick oats
- 1/2 cup peanut butter use natural peanut butter for better flavour
- 1/2 cup honey use maple syrup for a vegan substitute
- 1 tsp vanilla extract
- 1 tsp fine sea salt
Combine all ingredients in a bowl and mix well.
Using the dough scoop, create equal size balls (makes about 8 large ones)
Chill for 20 minutes before serving (firms up the peanut butter and makes them less crumbly). Keep in the fridge and enjoy!
